Ingredients (for 4 people) Total time: 40 min
1 beautiful rabbit cut into six pieces
4 lemons
300 g of couscous grains medium
1 star anise
1 bunch of mint
15 cl olive oil
2 bunches of fresh coriander
3 cloves of garlic
salt, pepper
Steps:
Peel and halve the garlic cloves. Wash and dry the herbs. Squeeze the lemons. Pour the juice into a large dish with the olive oil, the chopped garlic, the star anise, one of the coriander bunches that you will have chopped. Add salt and pepper. Mix well and add the pieces of rabbit. Leave to marinate for 2 hours, turning them over from time to time.
Drain the meat. Pour the couscous grains into a large salad bowl and soak them with the marinade, after removing the garlic and anise. Add the mint and the second bunch of coriander, finely chopped. Mix well. Add water if necessary. Leave to swell in a cool place.
Turn on the oven to grill and cook the rabbit for 7 to 10 minutes on each side. Serve hot with fresh tabbouleh.
